These recipes came from a cute book we got from the library and I wanted to save them for future reference!
Apple Muffins
1/2 c. sugar
1/4 c. butter
1 egg
1 c. milk
2 c. flour
1/2 tsp. salt
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. nutmeg (optional)
1 1/2 cups. peeled, chopped apples
Topping: 1/2 c. brown sugar, 1 tsp cinnamon
Cream together sugar and butter. Add egg and beat well. Stir in milk. In another bowl combine flour, salt, baking powder, and spices. Add egg mixture to flour mixture and blend until just moistened. (batter will be lumpy). Add apples to batter and blend carefully. Fill well greased muffin tin. Sprinkle with topping. Bake at 400 degrees for 20-25 minutes until golden brown. Makes 1 dozen.
Applesauce Cake
1/2 c. butter
1 c. sugar
2 eggs
1 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. each nutmeg and allspice (optional)
1 c. applesauce
2/3 c. raisins....maybe apple chunks? (I hate raisins!)
Cream together butter and sugar in large bowl. Add eggs and beat well. In separate bowl sift flour, soda, salt and spices. Add to creamed mixture alternately with applesauce, beating after each addition and bledning well. Stir in raisins. Pour batter in 9 inch greased tube pan (bundt?) 375 for 45 minutes or until browned (toothpick comes out clean). Cool then spread with frosting.
Butter Frosting
2 TBLS softened butter
2 c. powdered sugar
1 tsp. vanilla
3. TBLS milk

Photo 101
This month I have been taking Photo 101 from Nicoles Classes...I have wanted to take this class for a few years and finally had a camera to use and money saved up for this class!
I have loved it and loved learning things about how to take better pictures! Like the above is one of my favorite pictures I've taken the whole class. In the bottom picture the camera chose the white balance, and the other I changed the white balance to warm up the picture. Isn't it awesome how many things there are to learn about how to make a beautiful image? I love it!
